Is it possible to have 2 shunt trip circuit breakers activate upon a critical fault? I have 2 Noark 400amp breakers with a 24v pulse shunt trip - one for the battery pack and one for the incoming solar. Can this be done via 2 of the relays on the expansion board - and if not can the one relay activate the 2 breakers? Thanks

Yep! You can have as many outputs as you want set to the same thing, and they will all trigger.
Alternatively, your parallel approach should be fine as long as you don’t go past the current ratings of the Expansion outputs.
